Solidea's Passito di Pantelleria is crafted using traditional, natural winemaking methods. The three-hectare vineyard is located on south-facing, terraced land that is prone to dry, windy conditions. To survive in this challenging climate, the grapes are grown using an ancient technique where the vines are planted in shell-like hollows. This protects the vines from the wind and heat, while also channelling precious nutrients towards the root system.

The island of Pantelleria is renowned for this unique vine-growing system. The Zibibbo grapes are hand-harvested between mid-August and mid-September, then laid out in the sun to dry for 25-30 days. After the dried grapes have been macerated, the Passito wine is aged in stainless steel tanks for 2-3 years.

Tasting Notes: This Passito has a deep golden-amber colour. On the nose, it offers rich aromas of dates, sultanas, and acacia honey. On the palate, it is luscious, soft, and persistent. This is an excellent dessert wine, pairing perfectly with pastries. It also makes an essential accompaniment to a cheese course, especially blue cheeses. Alternatively, it is wonderful to enjoy on its own, inviting contemplation and meditation.
