Located in Santenay at the southern tip of the Cote d'Or, Tom Williams' label Ô MA make small batches of expressive wines, focusing on regional and village appellations with the least amount of intervention to obtain wines with purity of fruit, expressing the vintage and terroir. Most importantly, the focus is on responsible winemaking, sourcing as locally as possible and maintaining sustainable practices.
Organically grown in Santenay's 'Sous la Roche' vineyards, the grapes benefit from rocky limestone and marl terroir that encourages deep vine rooting and enhances mineral complexity. Gently pressed without SO₂ and fermented with wild yeasts, the wine then underwent lees stirring for balanced mouthfeel before being aged in 50% new oak with the remainder in seasoned oak barrels.
