This Hautes Côtes de Beaune Blanc, sourced from young vines near Pernand-Vergelesses, is Ô MA's most natural cuvée to date, with no SO₂ added at pressing or after settling.
The wine underwent a long, slow eight-month fermentation with indigenous yeasts, followed by natural malolactic fermentation and lees stirring to enhance mouthfeel and structure, with only minimal SO₂ added just before bottling.
Aged in 30% new oak with the remainder in old neutral oak and bottled unfined and unfiltered, it's natural in spirit but wouldn't officially qualify as such—inspiring the playful name "Ceci n'est pas un vin naturel," a nod to Magritte's exploration of perception versus reality.
