Sourced from the Côte Mâconnais, near the village of Pouilly-Vinzelles, this wine originates from a terroir defined by predominately limestone and marl soils, which offer excellent drainage and enhance the grapes natural acidity.
Grapes were gently pressed without the use of SO², and fermentation was initiated with wild yeasts. Malolactic fermentation proceeded naturally with active bacteria. Following fermentation, the lees were stirred to enhance mouthfeel and achieve a well-rounded balance. Minimal effective SO² was used, and the wine was bottled without fining or filtration.
Aging took place in 30% new oak, with the remainder aged in seasoned oak barrels to achieve a refined integration of flavours.
