Fabien Jouves Malbec Les Escures 2018

Fabien Jouves vinifies his low-extraction Malbec Les Escures, to keep the varietal fruit intact. The soil is made of white clay with pebbles of red clay. Harvested manually, it ages for 14 months on the yeasts in a reducing atmosphere, to avoid the need for sulphur. In fact, its wines contain sulphites in quantities naturally present in wines by fermentation.
