Rather unusually for this region, Yves Cuilleron has opted to cultivate the Gamay grape – with great success! It grows in granitic and alluvial soils, and is cultivated sustainably. The grapes are picked by hand, and sorted as they arrive at the cellar. Alcoholic fermentation is conducted in open vats, with around two weeks' maceration. The wine is then matured for 8 months in vats and barrique barrels. This IGP Collines Rhodaniennes wine should be drunk while still young for maximum appreciation of its fruity, floral notes. The palate is indulgent and crisp, enabling relaxed pairings with grilled meat or a charcuterie board.
