Mas del Périé, run by the young Fabien Jouves, is located on the Haut Plateau southwest of Cahors in Trespoux Rassiels. The terroir consists of complex clay and Quercy Limestone, a soft, permeable white tufo-style limestone. Occasional gravel deposits contribute to wines with enhanced immediacy and freshness.
The vineyard follows biodynamic principles. Grapes are hand-harvested and carefully selected before fermentation in inert oak or concrete, depending on the cuvée. Maceration typically lasts around 30 days. The wines are neither filtered nor fined. Fabien's five-year experience in Bordeaux has refined his skill in masterful tannin management.
Two distinct characteristics define these wines. First, they exhibit a purity of expression, offering a direct reflection of terroir and varietal character while maintaining focus and balance within the classic deep, inky Cahors style. Second, they boast remarkable drinkability, featuring freshness, liveliness, and restraint. While age-worthy, they're equally enjoyable in their youth.
Les Acacias, one of the region's top crus, is sourced from 40-year-old vines growing on south-facing, limestone-rich soil with iron deposits. This powerful wine displays a dark, concentrated colour with toasted, grilled, and spicy aromas. The palate is dominated by black fruits with pronounced tannins, leading to a surprisingly fresh and gourmet finish that suggests significant aging potential. Pair with cassoulet, Madeira ham, or beef steak.
