Assyrtiko in France we hear you say! Assyrtiko is a Greek grape variety best known in Santorini. It is minerally, powerful and complex. Domaine La Tasque decided to plant Assyrtiko near Bize-Minervois as it is drought resistant and high in acidity which helps keeps the wines balanced and fresh in hotter years.
75% Assyrtiko and 25% local variety Bourboulenc. The grapes were hand harvested and aged on lees in a ceramic egg for 6 months.
Bone dry with intense flavours of lime, toast and an almost salty, mineral edge balanced by fresh acidity.
