From Rio Itata, CoPa Wines is a small project that focuses on producing wine from the oldest small family growers across the region, producing small amounts of wine. Their philosophy is to produce boutique quality wines with respect for the vineyards the wines come from and their climates.
This 100% País is produced from dry-farmed vines estimated to be over 150 years old. The grapes are hand-picked and destemmed, then put into open-top wooden tanks to allow slow alcoholic fermentation to take place over 18 days. The wine is then aged in a combination of old French oak barrels and concrete eggs for 18 months before bottling.
It produces red fruit aromas such as cherries with wild herb and earthy notes, alongside firm but gentle tannins to provide structure and balance to a beautifully complex wine. Works well with Mediterranean dishes, oily fish, or chargrilled vegetable dishes.
