Over the years the Quintessence cuvee has become a trademark of the Château Pesquié style. It is a rich and complex wine, where the precision of the aging process underlines the freshness of the blends and brings out the best of the Roussanne grapes.
Thanks to its cooler microclimate and limestone soil, Ventoux a terroir for great white wines. The Chaudiere Family created Quintessence blanc to demonstrate this incredible potential. Made from a large percentage of Roussanne to which Clairette brings tension and balance, this very elegant cuvée is fresh, rich and complex.
Tasting notes: With a complex nose that mixes aromas of white flowers with pineapple and spices (saffron, curry) it is ample and round. Rich and balanced in the same time, with good freshness, saltiness, and a powerful aromatic intensity.
Pair with a truffle risotto and white delicate fish such as sole. Alternatively it goes wonderfully with a marinated chicken with candied lemon or a dry goats cheese with olive oil.
