A blend of Negroamaro, Merlot, and Primitivo grown in the Salento area of Puglia, they harvest late in the season to produce fully ripened grapes required for the appassimento method. After hand harvesting, the grapes are pressed and fermented with a long period of skin contact to extract flavours and its characteristic ruby red colour. Further aged in oak barrels for 3-4 months, resulting in a highly concentrated and moreish wine with notes of ripe plums and raisins.
