Special cuvee is the signature of the Bollinger style and is the object of the greatest care and attention. It is made from wines from the recent harvest but the majority of the blend is made up from re3serve wines from previous years. It is a great wine and embodies all the unique processes that are practiced at the House of Bollinger to ensure wines are made of the highest quality. It takes great knowledge to be able to produce the Special Cuvee blend each year. The blend is based on Pinot Noir composed of a large proportion of Grand and Premier Crus. A proportion of the grapes undergo their first fermentation in oak barrels.
The wine then spends a minimum of three years maturing in cellars before release. Golden in colour; a distinct sign of the black grapes and proof of fine maturity. The mousse is very fine and persistent. On the nose, complex aromas of baked apples and ripe spicy fruit. Delicately textured liked velvet on the palate with a good combination of structure, length and liveliness. Lingering flavours of pear, brioche, walnuts and spices.
