Bollinger Rose is made by the addition of red wine. Bollinger has always had a strong history with red wine partly due to the geographical link with the neighbouring region of Burgundy. Bollinger's commitment to quality is where it comes into its own as it it able to bring together the natural assets of its vineyards, its strategic decisions and the history of the house. The quest for quality starts with the selection of grapes that come exclusively from the grands crus of Bollinger's vineyards in Ay and Verzenay. The excellent quality of the grapes is thanks to stringent techniques in the vines leading up to the harvest: picking at optimal ripeness, low yields, successive tris through the vineyards and destemming of the grapes. Then, during vinification: maceration and fermentation in wood barrels. This red wine is added at 5-6% to the Special Cuvee blend to give birth to Bollinger Rose. The unique nature of a wine is not necessarily the sum of its components and tasting Bollinger Rose reveals another level to the mystery of the Bollinger style. On the nose red fruits such as wild strawberries, raspberry and cherry dominate but with spicy notes which link in to the Special cuvee. On the palate, more flavours of wild red berries and a very long finish.
