The “Montello and Colli Asolani” DOC area expands north west of the city of Treviso taking in the plains that lead to the Mercato Vecchio hills of Montebelluna. The surface substratum of the soil, located in the area of Montello, mainly consists of fertilised clay of a dark reddish brown colour. Thanks to the special structure of the soil and the favourable climatic exposure the area has ideal conditions for growing great vineyards of Cabernet, Merlot and Prosecco, which fill the slopes and plains of this area. There is a small winery here that is widely considered the best interpreter of Cabernet based wines in North East of Italy for over twenty years. The history of Serafini & Vidotto at Nervesa della Battaglia, is a tail of passion and respect for the territory, traditions and love for their native land. The estate?s 20 hectares of vineyards were gradually planted from the mid 80s, initially with Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot and lately with Recantina, Pinot Noir and Prosecco. Indigenous clones have been planted wherever possible on rocky, predominantly south facing slopes overlooking the Piave River. The grapes are carefully hand harvested and each site is vinified separately. The Bollicine Rose is a Charmat method sparkling wine made from Pinot Noir and Chardonnay. On the nose, fresh scents of blackcurrants, wild strawberries and pomegranate with touches of toasted bread in the background.
