Bedoba, which translates to 'Day of Luck', is a Georgian winery primarily dedicated to making wines from the country's indigenous Saperavi grape variety. Originally founded in 1737, Bedoba is located in the Kakheti wine region and produces grapes from vines averaging 30 years old. The soils in this region are rich black shale, and the steep southern slopes of the Caucasus mountains provide elevation of over 400m, which creates fresh acidity and soft tannins. Bedoba embraces sustainable and organic practices and hand-harvests their grapes.
The Saperavi is split into two groups when harvesting: a small percentage are whole-bunch fermented, and the remaining grapes are left to dry naturally on the vine until November, enhancing the savoury and spicy notes throughout the wines. The wine is partially vinified in traditional qvevri vessels. Dark purple in colour with a powerful savoury-spicy nose of blackberries, herbs, and black pepper, it has a creamy, juicy texture with ripe tannins and black fruit flavours.
