Situated in the foothills of the Pyrenees, surrounded by its vineyards, Domaine Gayda is a new destination in the Languedoc, 25km south west of Carcassonne, in the village of Brugairolles.
Owners Tim Ford and Anthony Record have joined forces with winemaker Vincent Chansault and Chef, Pascal Ledroit, to create the new face of wine and cuisine for the region.
Figure Libre is our concept of vineyard care and winemaking with no script or safety net. The vineyards are treated in such a way as to encourage biodiversity with minimal intervention, allowing the grapes to fully express their natural flavours and aromas.
A nose that is both floral and fruity gives great complexity, freshness and minerality. Well balanced with a purity of fruit enhanced by its roundness and length. A pleasantly fresh finish.
Fermentation in concrete egg fermenters. No racking off after fermentation. Light sulphur addition 1 month after fermentation. According to the golden number the egg shape keeps the wine in perpetual movement creating roundness while preserving the purity of fruit and freshness. Racking off 2 weeks prior to bottling for settling.
