A family domaine with 60ha of vines, this is has been in the hands of the Borrelly family for about 12 years, and is run by sisters Séverine (the winemaker) and Melanie who see their work as a continuing adventure. They have 23 ha of vineyards in Tavel, 32ha in Lirac and 5ha of Vin de Pays ‘Coteaux de Sèze’. The average age of the vines is about 30 years. The Tavel vineyard has 3 soil types: galets roulés, limestone pavement and sand. The Rosé is made from Grenache, Cinsault, Syrah and Mourvèdre, macerated in stainless steel vats for about 24 hours, it is a mixture of the free run juice (saignée) and pressed wine. Each variety is vinified separately at a low temperature to produce a seductive and lightly spicy rosé. After a 48hr cold maceration, the temperature rises for the fermentation, and the wine stays in the vats to age. It possesses a very ripe fruitiness and spice.
