Founded in 1983 by Jane Hunter and her late husband Ernie, Hunter's is deservedly considered amongst the top half dozen estates in the region. from a family of South Australian grape growers and a trained viticulturalist herself, Jane has been at the helm for 25 years and has long been a passionate spokesman for Marlborough wine. Her years of service to the industry have been acknowledged with an OBE and a CNZM. The winemaker here is Gary Duke and Dr Tony Jordan, the legendary Australian winemaker, acts as a consultant.
Hand harvested when the sugar acid balance was optimal for sparkling wine, the grapes were very gently pressed with no SO2 added to allow a gentle oxidation. Each varietal was fermented separately. The juice was transferred to stainless steel tank for fermentation followed by mlf. The blend was then made before second fermentation in bottle. The wine was aged on its lees for 18 months before disgorgement and re-corking with a relatively low dosage of 6.8 g/l of sugar.
