Sergio Mottura’s pretty wine labels are instantly recognizable as they exhibit either a large and very lifelike rendition of a porcupine or a cute, cartoonish version of it. Actually, though the animal looks like a porcupine, it is in reality an hystrix (from the latin name of Hystrix cristata), larger and much rarer as it is remarkably sensitive to pollution and pesticides. Nowadays it’s a protected species in Italy, and once the estate turned to organic grapegrowing and ecosustainable farming practices (such as installing a photovoltaic system enabling the estate to work with zero energetic impact), it was completely overrun with the critters who obviously found the pollution and pesticide-free environment to their liking. It was then that Sergio Mottura decided to make this animal his winery’s mascot. All this really wouldn’t matter any to wine lovers if the Sergio Mottura estate didn’t also produce some of Lazio’s and Italy’s greatest wines.
Soft pressing, preventive static purification of must by lowering temperature; deliberately slow fermentation of clean must under controlled temperature. Maturation in stainless steel containers, on fine lees, until end March. Refining in bottle for two months in cave.
Pale yellow with natural gold highlights. On a first appearance sweet on the nose , warm fragrance of wild mustard flower and vanilla; maturity reveals stronger scents such as mint, sage, thyme and certain resins. Dry but rounded on the palate, mellow, complex and persistent.
