The grapes are crushed and destemmed; the juice is clarified through settling overnight and then inoculated with a selected pure yeast. The wine is fermented in stainless steel tanks, where it is kept on its lees for five months before a light fining and bottling. Deep straw yellow in colour with a green hue. Intense and full of character, with integrated aromatic notes of citrus and tropical fruit, white peach, pink grapefruit and wisteria. On the palate it has plenty of character with elegantly mineral elements and good acidity. Without a doubt one of the finest examples of this variety to be found anywhere on the planet. In Sicilian cuisine it is paired with oranges, fennel and anchovy salad, stuffed sardines, spaghetti with seafood, lobster or pasta with Trepan "pesto".
