Domaine de Marcoux have 13 plots of land scattered in different parts of the designated Chateauneuf du Pape area with an average age of vines at over 50 years. The grapes are harvested only at full maturity which varies from one area to another. Harvesting is done manually with strict selection of grapes in the vineyard and back at the winery soring tables. Upon arrival to the winery, the grapes are destemmed, crushed and then cooled for pre-fermentation maceration. During the fermentation, which lasts for up to 3 weeks, temperature is carefully monitored with daily remontage for a good extraction of phenolics. The wine is then transferred into concrete vats, with some going into large casks for further complexity. The final blend is generally around 80% Grenache, 10% Mourvedre, 7% Syrah and 3% Cinsault. This is an outstanding Chateauneuf from an outstanding year. Rich flavours of Morello cherry, liquorice and herbs. This has fantastic ageing potential. Complex with a long finish.
