Desperate for a good mezcal to stock at his bar, Cafe No Se, John Rexer began smuggling artisanal mezcal from Oaxaca to Guatemala in 2004. More fitting of a Soderbergh film, Ilegal's history is full of bandits, river rafts, bribes and disguises.
Once in his bar it didn't take long for word to get out about this smooth and smoky spirit that was only available from the backroom at Café No Se. Soon, this mezcal was being carried in the luggage of travellers passing from Guatemala to America and beyond. In late 2009, Ilegal Mezcal became legal and today is carried in over 25 US states, Australia and countries in both Europe and the Caribbean.
On the nose the first thing you will notice is the combination of sweet and subtle smoky notes. Giving an aroma that only agave can, these characteristics continue to develop to reveal savoury vegetal notes with a lovely rounded aroma of ripe green pepper. The mouth feel is extremely smooth, savoury, sweet and smoky characteristics all evolving on the palate with hints of green apple, eucalyptus and pepper. A fresh and long finish, sweet agave notes giving way to a subtle smokiness.
