Palomino, Pedro Ximenez and Torrontes grapes are harvested in the cool of the Mendoza night to preserve freshness. They are then co-fermented at cold temperatures to produce a crisp and aromatic wine.
The vineyards are high in the Andes where they enjoy cool nighttime temperatures and snow melt from the mountains, perfect conditions to produce a wine with lifted floral aromas, electric citrus and rounded notes of peach and apricot.
